Maltitol

Maltitol is an artificial sweetener, belonging to the polyol group, chemical formula C12H24O11. Here is a description of maltitol and some common uses:

Description:

Chemical properties: Maltitol is a white crystalline powder with a sweet taste, its sweetness is about 50-90% that of sucrose. It is soluble in water.

Production method: Maltitol is produced by hydrogenating maltose, that is, maltose is obtained by reacting with hydrogen gas.

Purpose:

1. Food and beverage additives: Maltitol is widely used in various foods and beverages as an alternative sweetener to sucrose. It can be used in sugar-free foods, low-sugar foods, candy, chocolate, cookies, ice cream and other products to provide sweetness to foods without adding too many calories. Due to the high sweetness of maltitol, usually only a small amount is needed to achieve the desired sweetness effect.

2. Diabetes food choice: maltitol has a low glycemic index, that is, it has less impact on blood sugar levels, so it is often used in the food of diabetic people. It can provide diabetics with a sweet option without causing a spike in blood sugar.

3. Low-calorie food alternatives: Maltitol is lower in calories, about half that of sucrose, so it is chosen by some people as part of a low-calorie diet to reduce calorie intake and control weight.

4. Food process application: Because maltitol has the properties of moisturizing and anti-crystallization, it is also used as a moisturizing agent, crystallization inhibitor and ingredient in the manufacture of soft candy in food process.
